ñ0quIS

For 7 persons;

3 kg potatoes
500 grs. flour
1 tbsp gross salt
1 tsp nugmet
3 eggs

Cook the potatoes in pressure cooker for 20 minutes.
mash the potatoes but don't make a creamy pure, just mash the potatoes, add the eggs
and start putting the flour until don't stick in your hand, you may need to put more flour depending on the humidity or how wet they were the potatoes, the best is to put the potatoes as dry as possible.

Start rolling and roll for as long as it take:)

Boil water with salt and oil, drop the ñoquis and mix so they don't stick together, as soon as they float take it out and put it in a bowl with the sauce or just butter.
This is the amazing trick that Claudio teach us, and amazingly they keep it cool without kicking to each other!

Later I'll put the sauce that Facundo made that is woooo000nderFul!

MaFe

This is a Mali recipe that we learn from a guy in Paris. Is delicious and if you travel over there you can find it in the African 'foyer', maybe in her most original state, considering the distance from the country of origin.
And also you have the experience to feel in Africa in the middle of the city of love. grrrrr.!

So here they are the ingredients, are a lot, like any stove or puchero. I think so...)

1 chicken
1 whole garlic, leaving each tooth whole
2 large onions
butter
beacon or a little piece of dry fish to give the flavor and saltiness
salt
4 carrots, cut in slices
3 turnips, cut in 1/4
2 jams, the same
3 lb. okra,, cut in slices
2 lb. tomatoes, mash
2 cup of creamy peanut butter, no sweet
1 big cabbage
1 Habanero pepper

And now the proccess:

It looks complicate but is just putting all the ingredients and then checking ones in a while to control that is not getting burn or glue at the bottom
Remember to have a big casserole for this.

Here we go:

Cut the chicken in part and saute with onion in the casserole until golden. Put the garlic tooth's.
Then you start to put all the cut vegetables and the tomatoes.
With the peanut butter you put it in a medium bowl and you diluted with hot water until light and the put it in the pot. And last the cabbage cut it in 1/8 slices. Cover the casserole and leave it in high until start to boil, then go down to medium-slow and close it. Check every half hour to be sure that everything inside is getting well. Turn it. Cove again.
Put the Habanero in an small bowl to stem over the sauce.
You keep watching until you see little spots of oil floating, this is the oil of the peanut butter. You need to remove this oil, as much as you can.
Cook for another hour then serve over white rice and spice it with the Habanero.
Enjoy, from the bottom of my heart, I love this food!
